When the chef(Skip) is away, this is what I feed my kids. Thank goodness they love simple and quick meals just the same as gourmet. You don't even want to know the calories involved here. If you have make a quick easy meal that involves little brain power, what do you serve?

I would rather eat cardboard than Hamburger Helper but I am a big fan of Texas Toast.
When I am in a time crunch I normally boil/drain some Buitoni Ravioli then mix it with a jar of Classico Sun-Dried Tomato Pesto (has ½ the fat of the regular pesto) then add some frozen vegetables (microwaved first). It is quick, easy & yummy!
That looks SO good. I am so tired of eating out. I would love to be able to cook a meal! It was gorgeous here today, but it's supposed to snow tomorrow. This weather is crazy! I miss you guys so much!
Best and yummy recipe to fix when I want things quick is macc& cheese, hamburger meat and green pepper with a little garlic salt for seasoning. Served with creasent rolls. The kids love it and it is fast and always on hand.
Thought at the moment I'm all about making breakfast for dinner. You think?
Taco soup.
It takes a little planning ahead- like putting it in the crockpot in the morning- but so worth it! You brown a pound of ground meat- drain fat- add taco seasoning and add to crockpot. Put in a large can or crushed tomatoes, a can of water, can of drained corn, can of black beans, can of red kidney beans and 1 package of hidden valley ranch mix.
Stir well.
Eight hours later you have some really good soup that is also good for you. (its all the beans...)
You put the soup in a bowl with crushed tortilla chips, cheese and a little sour cream.
This is also a good one to freeze!

I LOVE Texas Toast
Although I do like to cook, Hamburger Helper is a staple over here at our house! My kids love the bacon cheese burger one and the cheesy enchilada! Very quick and very yummy! Hope you all are doing well and adjusting!!!
LOL Susie. Me too. I swear, that stuff completely bailed me out, night after busy night, when I was raising my children.
The funny thing is, Rob actually likes Hamburger Helper. And I personally gag at the thought, I made so much of it for so many years.
But you can't beat that garlic toast! THAT goes with everything, no matter what you're cooking.

At my worst, I was known to serve popcorn for dinner. Nothing else. Just a bag or two each of buttered microwave popcorn! :)
